EGG & AVOCADO PASTE

I don’t like eating boring sandwiches and absolutely love all the creamy pastes, but unfortunately not all of them are very healthy… So I decided to do my own, homemade and extremely easy EGG & AVOCADO PASTE… It’s not very creative, but as a mom I’m always looking for a nice, quick and healthy options! Egg & Avocado paste is unbelievably easy to prepare! Is packed with healthy fats, dietary fibre and proteins!! It’s not only great for you- it works perfectly for the whole family :)

WHAT DO YOU NEED:

1 ripe avocado
3 boiled eggs
1-2 spoons of natural yoghurt
1/8 Lemon
Salt
Pepper

HOW TO DO IT:

Simply boil the eggs until the whites are hard- if you want to you can leave the yolks slightly soft, so it would be easier for you to form a paste- peel them and put into a bowl.

Wash the avocado, cut it, take out the pit and scoop all the flesh with the skin with the spoon.

Add 1 or 2 spoons of natural yoghurt ( it depends on you how creamy the paste you want to be :) )

Blend* all the ingredients into the smooth and creamy paste.

Squeeze the lemon, salt and pepper to your taste.

Spread on your choice of bread, rice cakes or use it as a dip.

Place a slice of tomato, radish, fresh basil, dill or chives on top.

Mmmmhhh delicious! ENJOY!!!

* If you don’t have blender at home, you can simply mash all the ingredients using fork!
